Healthy and Unique Spring Dinner

Do you know those relaxing evenings spent at home that come up every once in a while? It is easy to just sit back and let the evening quickly pass by. However, these times, insubstantial as they may seem, are full of great possibility. They are a beautiful time we could spend with those we love. Talking with family, helping each other cook, or sharing a meal together are all so important. Get out some candles and fine dishes and join me as I share recipes for a lovely dinner at home! ✨






To set the atmosphere, use fresh flowers, tea light candles, and candlesticks. Use special occasion glassware. Put on some classic dinner music (my recommendations: Dean Martin, Frank Sinatra, or anything in French 😂)


SPRING SALAD

PREP TIME: 20 minutes

SERVING SIZE: 6


The meal was spring-inspired. Of course, going with this theme, a bright salad was important to start with!


Ingredients:

Salad

  • 4 cups spinach or leafy salad greens

  • 1 sliced carrot

  • 1/2 sliced cucumber

  • 1/2 cup sliced strawberries

  • 3 tbsp. feta cheese crumbled

  • Dressing or vinaigrette of choice

Optional Topper: Grilled Cinnamon Chicken

  • 4-5 lbs. chicken tenders

  • 1/2 yogurt

  • 1/2 cup milk (I used almond milk)

  • 1 egg

  • 2 tbsp. cinnamon

  • Pinch of turmeric

  • Pinch of nutmeg

  • Dash of salt

Instructions | Salad

  1. Thoroughly wash the spinach and place it in a large bowl.

  2. Top spinach with carrots, cucumbers, strawberries, and feta. Lightly toss.

Instructions | Chicken

  1. In a large bowl, whisk together yogurt, milk, egg, and spices.

  2. Place chicken tenders in the bowl. Lightly stir and let sit for 30 minutes.

  3. Preheat grill to 500 degrees

  4. Place marinated chicken tenders on the grill. Use aluminum foil or pan to prevent the marinade from spilling on the grill. Make sure to pour any extra marinade over the chicken.

  5. Grill on each side for 5-6 minutes. Time may vary by the grill. Always double-check before removing it from the grill. If chicken appears pink or shiny, cook longer!

  6. Let cool before topping on the salad.

SWEET POTATO NESTS

PREP TIME: 20 minutes

SERVING SIZE: 5


Don't let this recipe's uniqueness turn you away. The flavors between the sweet potatoes and the eggs have delicious chemistry together!


Ingredients:

Salad

  • 3-4 large sweet potatoes or yams

  • 1/4 cup olive or avocado oil

  • 5 eggs

  • Dash of salt

  • Dash of pepper

  • Optional topper: microgreens

Instructions

  1. Wash and peel sweet potatoes.

  2. Using a spiralizer, spiralize the sweet potatoes and put them in a tall soup pan.

  3. Pour in oil and salt/pepper into the large pan.

  4. Cook on the stovetop medium-high for 10-15 minutes or until carmelized.

  5. Put sweet potatoes into a frying pan. Turn on heat to medium-high.

  6. With a fork, divide sweet potatoes into 5 piles. Put a small hollowed space on top of the pile for the egg

  7. Crack an egg on top of each pile.

  8. Cover with lid and cook for 10 minutes.

  9. If eggs still look undercooked, place in the oven to finish up.
