Cozy Winter Dinner Idea ❄

I hope your January is off to a great start. Here we are starting to feel the chilliness of true winter weather. It is the perfect time to spend time in the kitchen and try a traditional favorite- chicken potpie.
Growing up, this was one of my childhood favorites. Since going gluten/dairy free it is pretty hard to come across a chicken potpie that meets that criteria. Okay...I have tried the healthy freezer version, but it is just not the same...
Enter in today's dish inspired by a recipe in the just-released Sweet Laurel: Savory cookbook. I have been a fan of Sweet Laurel's first cookbook that focused on rethinking baked goods in a clean and healthy way.
The recipe involved two sections the filling and the pastry crust
HEALTHY CHICKEN POTPIE
Recipe inspired by Sweet Laurel: Savory, Gallucci and Thomas, 2021
Ingredients:
Pastry
-1 cup cassava flour
-1 stick butter (I am mostly df!)
-1/4 cup coconut oil
-3/4 cup very cold water
Filling
-2 chopped carrots
-2 chopped celery stalks
-1 chopped yellow onion
-1 bag frozen peas
-2 tbsp. coconut oil
-black pepper
-french herb mix
-parsley
-oregano
-2 cloves crushed garlic
-1/4 cup arrowroot
-2 cups chicken broth (more, if needed)
-3 cups cooked, chopped chicken
-1 cup coconut cream (taken from top of can)
-nutmeg
-salt

Cook at 375 degrees for around 45 minutes.
Enjoy! I also served this with a side salad of dark greens and carrots.
